Does anyone please know of a Nokia with a large letters and numbers display (i.e. not keys).

Hi Geran1um,
I suggest taking a look at the lumia range, specifically the Lumia 800 or 900, they have larger screens with a touch screen keyboard.
If you are not looking to get a windows OS phone the E7, N8 or Nokia 808 could also be options.
You can also use third party applications to change the font size on some devices.

Unfortunately I would have to dispute that either of these devices are satisfactory for the visually impaired and "Accessibility" needs to be built into the OS such as iOS not an afterthought afterwards:
In Symbian OS "Font Magnifier" can only increase to 110% before all sorts of issues so N8, E7 or 808 don't really address this issue either, although ability to use Nuance Talks for severely disabled. Below is example from iPhone for comparison, although limited to listed applications.
Symbian specialist until 31/01/2013 with interests in Maemo & MeeGo but an aversion to Windows!

Nokia doesn't have any models specifically targeting senior citizens, but Doro is a manufacturer who does, and you may wish to check them out, too, unless you have some specific reason why it has to be a Nokia model: http://www.doro.co.uk/

t has to be Nokia and they are aware that there is not a specific senior citizen model in Nokia but were asking if anyone knows of a Nokia that has large letters and numbers in the display?
