How to use Lumia 920 with USB-cable or Bluetooth as modem for laptop ? I used my E7 as modem with USB cable before I bought Lumia 920.

The E7 is a Symbian phone while the Lumia's are Windows based, so they are totally different.
I know for a fact you can't use the Lumia 800 as a USB modem and as far as I know, it is the same with the Lumia 920. However, internet sharing using wifi hotspot is built in to the windows phones so sharing your internet connection is even easier now. I am sure your laptop has wifi. Only thing you have to check is that your network supports tethering. Not all networks do unfortunately

Novice here, how do I go about making my lumia 800 a hotspot for my tablet, it has a poor arial so was hoping can use my broadband on it via my mobile

You cannot talk and use Wifi Internet sharing. On the N9 and Symbian phones I could. Also Bluetooth.
Most areas in Southern California I get about the speed on my 700 as the LTE (5MB). Some places I get 15-20Mb on LTE but that is rare. The 700 is not an ATT smart phone, so the plan is inexpensive.
I ordered another 700 and will likely take my 820 back next week.
FWIW I have/had: two 920s, two 820s, three 700s, 1 N9, C6, N8, E71, E75 and E7
