It's impossible, the default recorder has not this feature. You can use AbcRecorder, it's free. Here is it: http://www.nokiarecorder.com.

while in call press "Home" button & goto the "Recoder" application, it will be better if you keep it in main menu, and start recoding... Your call will be recoded...

There is no inbuilt option you want to use third party app
