Unless you are using sub-standard headphones and not properly encoded audio I do not see anything wrong with the Lumia 800 audio quality as-is.

 

The Lumia 800 has a low impedance headphone out jack so using high impedance headphones will in general result in less then desirable quality and may also not give your the volume you'd like. In my experience 8 or 16 Ohm headphones will do fine.
