Right - figured out a work-around.
For this to work you need access to a computer with Microsoft Outlook installed. I'm running Win 7 Outlook 2010.
So:
- Go to Outlook
- Add a new e-mail account and enter your Hotmail/Live details (may require you to install Outlook Connector)
- Plug your phone in, load up Nokia Suite and wait for the phone to show as connected...
- Go to: Sync --> Sync Options --> Calendar & Tasks
You have the option to change where your calendar and tasks are synced to within Outlook.
- Click "Change" and select the Hotmail / Live account you just added to Outlook. Do this for both Calendar and Tasks if necessary.
- Click OK
- Goto Sync --> Sync Now --> Calendars and Tasks
Wait for the sync to finish and close all notifications etc, then...
- Go to Outlook, click on your recently added inbox and hit the calendar button.
- Go to File --> Save Calendar
Please follow these next steps carefully to save you having to repeat the export!
Make sure your saving as a .ICS file, then...
- Click on MORE OPTIONS and select the following parameters:
- Date Range: Whole Calendar
- Detail: Full Details
- Advanced --> Show: Include details of all items marked private
Of course if you want to alter any of these, do what you need to, but if you don't select the "Include Details" options, when you import into Hotmail, most of your entries will just say "Private" and you'll have to do it all again 
Once all the above are done...
- Choose the file path you want to save to and hit SAVE.
Now go to your Outlook account settings and remove your added account, to avoid duplicates (outlook will auto-update hotmail, but it seems to take ages and we can do it MUCH quicker)
- Now go log into your Hotmail / Live account.
- Goto Calendar (under Hotmail Highlights) --> click SUBSCRIBE --> IMPORT FROM AN ICS FILE
- Browse for the file you just saved from Outlook
- Select IMPORT INTO AN EXISTING CALENDAR and select your primary calendar (it will be the only option available unless you've already manually added a 2nd)
- The PREVENT DUPLICATES option is up to you. As i used my phone calendar for everything, i selected ONLY KEEP THE NEW EVENTS
- Select USE THE REMINDERS THAT ARE ALREADY IN YOUR ICS FILE
And finally...
- Click IMPORT CALENDAR.
If your Windows phone is set up with the correct Hotmail/Live account (you can check this under SETTINGS within the calendar app), your phone calendar should auto-update with 10-20mins, depending on connection.
Et Voila - all your calendar entries and tasks are in your Windows Phone! Even better - recurring items are there also, something Nokia Suite couldn't do
