I'm putting full albums in their own folder onto a SD card in my N8 but when I open Music Player/Albums the songs are listed individually (although some others are enclosed in a folder)

Is there something I can do to organise them into folders?

have you tried refreshing the music library in the options of the Music Player?

Select the files of same album, right click and select properties. Now edit the album name and press apply/ok. Copy these files to phone memory card and refresh music player.
Now the files should be under same album.

Does each file have to start with the same word?

No. You just have to select the songs, right click, open properties, and change album name and press apply.
