*#7370# is a soft reset - soft in that it happens through software as a routine called in response to the keycode.
"call"/'3'/'*' is a hard reset in that you're forcing the reset by hardware. The phone scans for those keys being pressed at startup and it goes into greater depth than *#7370#.
