There is no way to make some other, user-installed browser become the default browser.
Opera Mini is rather quick, as with it you're never downloading the full page direcly from the server you are connecting to, but you are always connecting through an Opera proxy/cache server, which probably already has downloaded (most of) the page/site you are accessing, and has converted it to be smaller (compressing pictures, etc.) and sends thus much less data to your phone than if the browser accessed the original page, downloaded and processed (parse & render, as the terms go) the content.

On Symbian Anna devices and Symbian Belle devices, there is a way of switching browsers and it can be found at settings>application settings>default applications>browsing internet. Opera Mini cannot be able to be kept as the default browser but if you have Opera Mobile you can select it to be the default browser for browsing other than the device's native web browser.
