After updating to the latest software on my Nokia 700, all previous arrangement of Apps and icons was undone, and they were re-arranged to previous defaults.

How can that be avoided? Plus, is there a way to re-arrange them according to their previous state (before the update)?

You should be able to adjust / set as per your liking by firts going to the screen where the application icons are visible.. then if you want to organise the Order in which they appear on the same screen goto Options --> Organise and drag the icon to desired location or if you want to move it to other folder select the icon-->Option-->Move to Folder.. and select appropriate folder...

I already know how to arrange them, the problem is why did the arrangements I already made change after the update?

I believe its a standard default, so when you did the update it sounds like it just defaulted back, and I guess it will happen next as well, unless Nokia come up with a solution in the mean time.

Not sure whether restoring the SETTINGS makes any difference ...

Re-install the Firmware thru' Nokia Suite and see if the problem gets resolved ..

if the re-install doesn't work, then you will need to take your phone to your local Nokia Care point for them to inspect: http://nokia.com/support
