Hi Doggi,
When an alarm sounds, you can snooze the alarm. This pauses the alarm for a defined length of time.
When the alarm sounds, select Snooze.
Set the length of the snooze time

On the home screen, select the clock.

Select Options > Settings > Alarm snooze time , and set the length of time.
You can snooze alarms also by turning your device display down.
Activate turning control for snoozing
Select Menu > Settings and Phone > Sensor settings > Silence alarms > On .
Also, please note that the alarm will snooze up to around 8 times, you can set another alarm for longer snooze periods to ensure you don't miss it. You can set the snooze to ring at slightly longer intervals.
Example: Instead of just 2 minutes. And set a second alarm to go off in the middle of the first snoozed alarm. And perhaps a slightly more annoying alarm tone.

Fact is Doggi, Symbian OS has been like this since alarms were built in. And unfortuately there is no fix to this.
Partly agree with you that you can not extend the time more than 1 minute..but the work-around suggested by haZey
is definitely worth.. I had tested it long ago on my Nokia 5800xm by setting 2 alarms just a minute away and snooze time of 1 minute..(e.g. Alarm 1 - 05:00am and Alarm 2- 05:01am with snooze set to 1 minute..) and the alarm went ON and ON untill I got fed up.. May be more than 12 minutes and I had to stop it.. This is surely much much longer than any full length song that you may intend to set...
