Could anyone assist with how to change my phone which currently uses Chinese/ Mandarin? as the default operating language? I would like to change this to English.

Hi ros_g, 

Welcome to Nokia discussions board! 

If English is already installed on the device, you simply have to manage and get to the languages menu. Press on the middle button for Menu, then tap on bottom right gearing icon then on the phone icon, the map icon, tap on the first of the three options and look for "english". 

If English is not on the list, then please visit your nearest Nokia Care Point to install the language on it.

I have a Chinese phone bought in Taiwan; English is installed as a default option here and I think in other Chinese speaking countries.

The options are under settings/phone/language. You need to restart the phone to change the phone language itself, but not to change the default writing language. I usually have mine set as an English phone but with Chinese input (which allows you to switch between Chinese and English keyboards.)
